Hero Hostess Summer Picnic Blog Hop! (& GIVEAWAY)!

Hi everyone!

Here's my summertime card using a Hero Arts watermelon stamp, Hero Arts background stamp, and a computer-generated sentiment:



Supplies:


Can I tell you a secret? I don't like watermelon! Shh... but my kids do and they ask for it throughout the year. I always tell them it's a summertime treat that has to be eaten outside. ;)

Since we're having a picnic I thought I'd share a recipe for a salad I DO like very much:

Quinoa Salsa Salad (Makes 6-8 servings.)

Dressing:
3 tbsp salsa
1 tbsp olive oil
2 tsp cider vinegar
2 tsp chili powder
salt and pepper to taste

Mix dressing ingredients together and set aside for at least one hour.

Salad
1 cup cooked quinoa
1 cup cooked wild rice (or brown or white)
1/ cup rinsed, drained canned black beans
1/2 cup rinsed, drained canned red kidney beans
1/2 frozen corn kernels thawed
1/2 cup chopped celery
1/2 cup chopped red bell pepper
1/4 cup chopped red onion
2 tbsp snipped fresh cilantro

Mix salad ingredients together. Pour dressing over salad and toss well to coat. Cover and refrigerate for at 4 hours or overnight to allow flavours to develop and blend.

Enjoy!

Thanks for the recipe; it sounds delicious. I'm always looking for new quinoa recipes. The card is so sweet--love the new take on watermelon, and the scattered dots background. Funny, my mother always made us eat it outside, too, for good reason (flying seeds).
